| Caprese Ciabatta Pizza |

| SERVES 2 INGREDIENTS: 1 medium sized ciabatta, cut open Olive oil for brushing 1 clove garlic 60 - 75 ml basil pesto 300 g LANCEWOOD Mozzarella, sliced 250 ml cherry tomatoes, halved A handful of fresh basil leaves Balsamic glaze Salt and freshly ground black pepper to taste |
METHOD: Brush the two sides of the ciabatta with olive oil and rub with a clove of garlic. Spread basil pesto over both sides. Arrange sliced mozzarella on top and arrange the cherry tomatoes on top and in between. Grill until golden and bubbling. Sprinkle with basil leaves and drizzle with balsamic glaze. Season to taste and serve immediately.
