Chilli Cheese Burgers

SERVES 4

INGREDIENTS:

500 g lean beef mince
1 red onion, chopped
1 - 2 mild chillies, chopped
125 g Lancewood
Cheddar cheese, grated
30 ml mixed chopped thyme and parsley
1 extra large egg
30 ml oil
4 hamburger buns
Olive oil
250 ml rocket leaves, rinsed and dried
1 large tomato, sliced
½ a yellow pepper, sliced
Red onion rings
8 thick slices LANCEWOOD
Cheddar cheese
Sweet chilli sauce
METHOD: Combine the mince, onion, chillies, cheese, thyme, parsley and egg. Mix well and shape into 4 large hamburger patties. Heat the oil and fry the patties until golden on both sides. Cut the hamburger buns open and brush with olive oil. Place under a heated grill and grill until golden. Top with rocket leaves, sliced tomatoes, yellow pepper rings, the burger patty and slices of cheese. Drizzle with sweet chilli sauce.
Serve with crisp fries.
