| Kassler and Cheese Sandwich |

| SERVES 4 INGREDIENTS: 4 kassler chops, bones removed 30 ml butter 60 ml redcurrant jelly 250 ml red cabbage, thinly sliced 10 ml red wine vinegar 10 ml sugar 2 ml aniseed Salt to taste 200 g sliced LANCEWOOD Gouda cheese 12 thin slices ciabatta or any other bread of your choice Mustard Watercress |
METHOD: Use a sharp knife and cut the kassler chops in half sideways. Heat the butter and the redcurrant jelly together and fry the kassler chops until golden. Mix the cabbage with the vinegar, sugar, aniseed and salt. Set aside and leave to stand for 15 minutes. Drain. Spread a slice of bread with butter and then mustard. Top with red cabbage and watercress, slices of cheese and watercress. Top with slices of kassler chops and then another slice of bread. Repeat. Serve with pickles, more redcurrant jelly and mustard. |
