Pesto and Sundried Tomato
Cream Cheese Spread

SERVES 4 - 6

INGREDIENTS:

1 x 250 g tub LANCEWOOD superior cream cheese
90 ml basil pesto
8 - 10 sundried tomatoes
45 ml toasted pine kernels
Fresh basil leaves
Olive oil
Balsamic glaze
Melba toast or savoury biscuits for serving
METHOD: Demould the cream cheese and cut in half sideways. Place the bottom half on a serving plate and spread with half the pesto. Top with half the sundried tomatoes. Replace the top half and press down lightly. Spread with the remaining pesto and top with the remaining sundried tomatoes. Sprinkle with toasted pine kernels and fresh basil leaves. Drizzle with olive oil and balsamic glaze. Serve with Melba toast or
savoury biscuits.
