INGREDIENTS:
1 x 250g Lancewood Plain Low Fat Cottage Cheese - Smooth
4 - 6 Large Muffins
1 Tsp lemon juice to taste
2 teaspoons castor sugar
¼ cup mix dried fruit – chopped
Honey to drizzle.
¼ cup mixed nuts & seeds – chopped (Pistachio’s, Walnuts, Almonds etc)
METHOD:
Mix together the lemon juice, sugar & cottage cheese.
Slice the Muffin horizontally into 3 sections.
Gently Stir in ¾’s of the dried fruit.
Spread the cream cheese between the layers of muffin.
Drizzle Honey over the top of the muffin & top with a sprinkling of nuts & dried fruit.
