INGREDIENTS:

250 g Lancewood Fat-Free Smooth Cottage Cheese
· 4 Tbls castor sugar
· 1 cup fresh strawberries
· whites of 2 eggs
· juice and grated rind of ½ lemon
· 2 Tbls brandy (optional)
METHOD:
Chop the strawberries in small pieces and place in a bowl. Cover with 1 Tbls castor sugar and leave in refrigerator for ½ hour. Mix 2 Tbls castor sugar, Cottage Cheese and brandy in a bowl and add chopped strawberries. Beat the egg whites with 1 Tbls castor sugar to stiff creamy texture and fold into the strawberry and cheese mixture. Spoon into glass desert bowls and decorate with whole strawberries and mint leaves. Serve chilled.
