Lancewood Air Fryer Mini Cheesecakes

Ingredients

Crust:

100 g digestive biscuits
50 g sugar
45 g butter , melted

Filling:

230 g LANCEWOOD® Medium Fat Plain Cream Cheese
50 g sugar
5 ml vanilla essence
1 large egg
60 g white chocolate
60 ml LANCEWOOD® Double Cream Plain Yoghurt

To finish:

40 g white chocolate , melted
speckled eggs

Method

Crust:
Add the digestive biscuits and sugar to a blender and blend until smooth. Add the butter and mix together.

Add two tablespoons of the biscuit mixture to 12 muffin cases and press down firmly to form the crust.

Air fry at 175°C for 3 minutes and set aside.

Filling:
Add the Cream Cheese to a mixer. Add the sugar and mix well.

Add the vanilla essence, egg, white chocolate and yoghurt and mix well.

Add filling to each muffin case and Air fry at 165°C for 9 minutes.

To finish:
Top with melted which chocolate and speckled eggs.

Enjoy as a fun and festive dessert!
