Lancewood Chocolate Frozen Wreath

Ingredients

Chocolate layer: 

230 g LANCEWOOD® Medium Fat Plain Cream Cheese
60 g white chocolate shortbread balls , crushed
60 g chocolate shortbread balls , crushed

Berry & nut layer: 

230 g LANCEWOOD® Medium Fat Plain Cream Cheese
80 g raspberries
80 g blueberries
50 g pistachio nuts  or pecan nuts chopped
8 cherries
1 kiwi , sliced & cut into stars using a star shaped cookie cutter
chocolate stars

To finish:

40 g chocolate balls
40 g raspberries
40 g blueberries
8 cherries
mint sprigs
1 kiwi , sliced & cut into stars using a star shaped cookie cutter
chocolate stars

Method

Chocolate layer:
In a bowl, mix together the cream cheese and the crushed chocolate balls.

On a piece of baking paper, draw a 25 cm in diameter circle and place it on a plate.

Shape the cream cheese and chocolate mixture on top of the marked circle and flatten out slightly to make a wreath.

Berry & nut layer:
In a bowl, mix together the cream cheese, berries and nuts together. Spoon this mixture on top of the chocolate layer.

Freeze the two layers until solid. Remove from the freezer 30 minutes before serving.

Place the frozen chocolate wreath onto a serving plate and finish with chocolate balls, berries, mint, cherries and kiwi fruit stars.

Arrange the chocolate stars around and enjoy!

HINTS & TIPS:
To make the chocolate stars, melt chocolate and pour into star shaped chocolate moulds.
