Lancewood Creamy Bacon & Pea Pasta Salad

Ingredients

125 g pasta shells  or fusilli, cooked according to the instructions on the packet
15 ml olive oil
250 g rindless streaky bacon , chopped
250 ml frozen peas
125 Parmesan , grated
30 ml fresh basil , shredded

 

Dressing:

250 g LANCEWOOD® Medium Fat Smooth Balsamic & Onion Cottage Cheese
160 ml milk
15 ml balsamic vinegar
10 ml sugar
salt & freshly ground black pepper

Method

Drain the pasta and set aside.

Place a frying pan over a medium heat and add the olive oil and bacon. Fry until golden and crispy.

Remove from the heat and add the peas. Toss to coat in oil. Add the peas and the bacon to the pasta.

Stir in the Parmesan and basil leaves.

Dressing:
In a bowl, mix together the cottage cheese, 125 ml milk, vinegar, sugar and seasoning to taste. If the dressing is too thick, add a little more milk to thin it down.

Add the dressing to the pasta and mix through.

Refrigerate before serving.
