Lancewood Home-made Bread with Cottage Cheese

Ingredients

240 g whole wheat flour
240 g self-raising flour
5 ml baking powder
5 ml salt
15 ml sugar , or sweetener of your choice 
60 ml mixed seeds , plus extra for sprinkling on top
500 g LANCEWOOD® Fat Free Smooth Plain Cottage Cheese  (2 x 250g tubs)

 

To serve: 

250 g LANCEWOOD® Lactose Free Low Fat Plain Yoghurt , or LANCEWOOD® Low Fat Chunky Cottage Cheese or LANCEWOOD® Low Fat Chunky Cottage Cheese Chives
2 tomatoes , sliced
cucumber , 8 slices
fresh basil
1 avocado pear , sliced
ham , 4 slices
salt & freshly ground black pepper

Method

Preheat the oven to 180°C. Grease and line a loaf tin with baking paper.

In a mixing bowl, mix all the dry ingredients together until well combined. Add the cottage cheese mix to form a dough. 

Shape the dough into a round or oblong loaf and place onto the prepared baking sheet.

Sprinkle extra seeds on top and bake for 30-40 minutes until the bread is golden, fragrant and makes a hollow sound when overturned and gently tapped.

To serve:

Cut the bread into slices and spread with cottage cheese, then top with tomato, cucumber, basil, avocado and ham. Season to taste.
