Lancewood Lactose-Free Banana Bread

Ingredients

3 large banana(s) , overripe
115 ml LANCEWOOD® Lactose Free Low Fat Plain Smooth Cottage Cheese
2 large egg(s)
80 ml oil
125 ml brown sugar
5 ml vanilla essence
245 g cake flour
5 ml ground cinnamon
5 ml baking powder
5 ml bicarbonate of soda

Method

Preheat the oven to 180°C. Grease and line a loaf tin with baking paper.

In a mixing bowl, mash the bananas using a fork. Add the cottage cheese and beat with an electric mixer. Add the eggs, oil, sugar and vanilla and beat well.

In a separate bowl, sift together the flour, cinnamon, baking powder and bicarbonate of soda.

Add to the banana mixture and gently fold in. Do not overmix.

Pour the batter into the lined loaf tin and bake for 50 - 60 minutes, or until a skewer inserted comes out clean. Allow to cool inside the tin for at least 30 minutes before removing it and slicing.

For a boost of protein, spread with our creamy Cottage Cheese instead of butter.
