Lancewood Lunchbox Pasta Salad

Ingredients

Pasta salad:

500 g rosmarino pasta
1 litre(s) boiling water
a red onion , chopped
100 g cherry tomato(es) , chopped
100 g cucumber , sliced & chopped
100 g LANCEWOOD® Low Fat Chunky Chives Cottage Cheese

Fried chicken breast:

20 ml dried origanum
5 ml dried thyme
5 ml garlic powder
5 ml onion powder
20 ml paprika
3 skinless chicken breasts
30 ml olive oil

Method

Pasta salad:
Add the boiling water to a medium sized pot and add the pasta. Cook on medium heat for 10 minutes. 

Strain out the water and pour on a lined baking tray to cool. 

Once cooled, place the pasta in a large mixing bowl. Add the red onion, cherry tomatoes, cucumber and cottage cheese and mix until well combined. Set aside.

Fried chicken breast:
Using a small bowl, add the origanum, thyme, garlic powder, onion powder and paprika and mix through. 

Season the chicken breasts with the mixed spices on both sides.

Heat the oil in a large frying pan. Cook the chicken for 5 - 7 minutes on each side. 

Cut the chicken breasts into strips.

To finish your lunchbox prep for 3 days:
Add the pasta salad to three lunchboxes and place the chicken strips on top.

Add fresh berries to the side, seal and refrigerate for up to three days.
