Lancewood Savoury Cottage Cheese Bowl

Ingredients

Pita chips:

1 pita breads
10 ml olive oil
salt & freshly ground black pepper  to taste

Cottage Cheese bowl:

180 g LANCEWOOD® Full Fat Plain Chunky Cottage Cheese
40 g cherry tomato(es) , halved
40 g red pepper , chopped
40 g cucumber , chopped
50 g whole kernel corn
small avocado , half sliced
1 hard boiled egg(s) , peeled & sliced
salt & freshly ground black pepper  to taste
15 ml sesame seeds , toasted

Method

Pita chips:
Slice the pita bread in half and cut into small triangles.

Place in a mixing bowl and drizzle with olive oil. Season to taste.

Air fryer:
Air fry at 160°C for 8 minutes, shaking the basket halfway through. Remove and set aside to cool.

Oven baking:
Preheat the oven to 180°C. Place on a baking sheet and bake for 10 – 15 minutes or until crispy.

Cottage Cheese bowl:
Add the cottage cheese to large shallow bowl.

Arrange the tomatoes, red peppers, cucumber, corn, avocado and egg inside the bowl.

Season and sprinkle the toasted sesame seeds over.

Dip the crunchy pita chips in the Cottage Cheese and enjoy as a healthy lunch!
